Bell Pepper Nachos

These are perfect for when I need a nacho fix, but wanna get in some veggies too.

Ingredients
  

  • 1 lb Simply Nature organic 100% grass-fed ground beef
  • 1 (15 oz) can black beans drained + rinsed
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp smoked paprika
  • 4 bell peppers any color you prefer
  • 1 (8 oz) block Happy Farms sharp cheddar cheese grated
  • 1/2 cup cherry tomatoes on the vine quartered
  • 1/2 cup Park Street Deli fresh cut mild salsa
  • 1/2 cup Park Street Deli chunky guacamole
  • 3 scallions minced
  • 1/4 cup minced cilantro
  • 1 jalapeƱo thinly sliced

Method
 

  1. In a large skillet over medium heat, brown the ground beef until cooked through, then stir in the beans and all the spices.
  2. Cut the bell peppers into strips, then arrange on a parchment-lined baking sheet. Top with beef mixture, shredded cheese + jalapeƱos.
  3. Broil for a few minutes in the oven, just until the cheese is melted. 
  4. Top with salsa, guacamole, scallion + cilantro, then DEVOUR.
