Bell Pepper Nachos
These are perfect for when I need a nacho fix, but wanna get in some veggies too.

- 1 lb Simply Nature organic 100% grass-fed ground beef
- 1 (15 oz) can black beans drained + rinsed
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp sea salt
- 1/2 tsp smoked paprika
- 4 bell peppers any color you prefer
- 1 (8 oz) block Happy Farms sharp cheddar cheese grated
- 1/2 cup cherry tomatoes on the vine quartered
- 1/2 cup Park Street Deli fresh cut mild salsa
- 1/2 cup Park Street Deli chunky guacamole
- 3 scallions minced
- 1/4 cup minced cilantro
- 1 jalapeƱo thinly sliced
In a large skillet over medium heat, brown the ground beef until cooked through, then stir in the beans and all the spices.
Cut the bell peppers into strips, then arrange on a parchment-lined baking sheet. Top with beef mixture, shredded cheese + jalapeƱos.
Broil for a few minutes in the oven, just until the cheese is melted.
Top with salsa, guacamole, scallion + cilantro, then DEVOUR.
