Bell Pepper Nachos

These are perfect for when I need a nacho fix, but wanna get in some veggies too.

Ingredients

  • 1 lb Simply Nature organic 100% grass-fed ground beef
  • 1 (15 oz) can black beans drained + rinsed
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp smoked paprika
  • 4 bell peppers any color you prefer
  • 1 (8 oz) block Happy Farms sharp cheddar cheese grated
  • 1/2 cup cherry tomatoes on the vine quartered
  • 1/2 cup Park Street Deli fresh cut mild salsa
  • 1/2 cup Park Street Deli chunky guacamole
  • 3 scallions minced
  • 1/4 cup minced cilantro
  • 1 jalapeƱo thinly sliced

Instructions

  • In a large skillet over medium heat, brown the ground beef until cooked through, then stir in the beans and all the spices.
  • Cut the bell peppers into strips, then arrange on a parchment-lined baking sheet. Top with beef mixture, shredded cheese + jalapeƱos.
  • Broil for a few minutes in the oven, just until the cheese is melted. 
  • Top with salsa, guacamole, scallion + cilantro, then DEVOUR.
