Single-Serve Deep Dish Chocolate Chip Cookie: I just want a damn cookie, y’all


Question: Does anyone really read long blog posts?? I always wonder this anytime I visit a blog solely to score a recipe and am forced to scroll through alllllllll the words and 10 different variations of essentially the same exact photograph. By the time I actually make it to the recipe, I’m annoyed. Which is why I’ll keep this short and sweet and cut right to the cookie chase. Because don’t play a player – I know why you’re here.

I developed this recipe because there’s pretty much never a time that I’d throw a freshly baked chocolate chip cookie outta bed, but most of the time, the thought of going to the trouble of whipping up an entire batch of cookies is more than enough of a deterrent to give me pause. In the long run, this is probably a good thing. But dammit, sometimes I just need a cookie – preferably warm and gooey and oozing chocolate. So this single-serving deep dish cookie was born from that primal need. You’re welcome.

When you want an ooey, gooey cookie, but don't want to screw around with whipping up an entire batch of dough, this is your solution.

Instructions
  1. Preheat oven to 360 degrees (I like the convection setting if you have it).
  2. In a small bowl, with a fork, whisk together the butter + sugar until fully incorporated.
  3. Mix in the egg yolk + vanilla until fully combined.
  4. Stir in the flour, baking soda + salt until it forms a dough, then stir in desired amount of chocolate chips.
  5. Scoop half the dough into a small baking ramekin lightly greased with coconut oil, sprinkle a few chocolate chips on top, then top with the rest of the dough. Sprinkle a little flaked sea salt on top (optional).
  6. Bake at 360 degrees for 16ish minutes - longer if you don't want the center to be gooey. (I personally loooove gooey.)
