The Smoothie Always Wins

I woke up this morning craving a smoothie bowl. I wanted fruity, I wanted creamy, I wanted granola-topped. Then my mind weighed in with some buzz-killing brain logic: Ummmm, have you stepped outside today? It’s 34 degrees and sleeting, and you want us to eat a smoothie bowl?! Pshhh. Bitch, please. 

Luckily, I give my stomach carte blanche to overrule my brain anytime it feels the latter is being unreasonable, so the smoothie won. I slipped on some gloves, curled up under a blankie with a heating pad and dug right in. Problem: solved. And it was everything I’d wanted and more. Creamy, dreamy, cold – but not too cold. The lush coconut milk and banana make sweet, sweet love, spawning a rich, smoooooooth base blended with sweet, fruity bluebs. Purely Elizabeth (the best) granola adds texture and crunch, while juicy little jewels of pomegranate seed provide an extra bursty zing.

This is craaaaaazy good. I don’t care if it’s 7 degrees outside. The smoothie always wins.

Instructions
  1. Put the coconut milk, vanilla, banana and blueberries in the blender and blend 90 seconds or so, until completely smooth. You may have to stop and mix things around every so often with a spoon.
  2. Pour into a bowl, then top with granola, blueberries and pomegranate seeds.
