Taco Omelette
This is the omelette that won me the chicken trophy. Need I say more? Bonus: my kids absolutely love it!!

Instructions
  1. To make the taco meat, heat the avocado oil in a skillet over medium heat, then brown the ground beef + stir in the spices. Remove to a plate + set aside.
  2. To cook the bell pepper, in the same skillet, add the avocado oil + sauté a couple min. Remove to a plate + set aside. Wipe skillet clean.
  3. To make the omelette, add the butter to the skillet + pour in the eggs, cooking a couple minutes, until set, tilting every so often to distribute any runny egg to the edges. Fill with ground beef + bell peppers + cheddar + fold in half.
  4. To make the avocado salsa, combine all the ingredients in a mini food processor until smooth-ish. Spoon on top of the omelette + top it off with a dollop of greek yogurt + fresh cilantro.
  5. Accept your chicken trophy gracefully.
