Cinnamon-Vanilla Quinoa + Browned Butter Sauteed Cinnamon Apples
A DELICIOUS, filling oat alternative. It’s pretty much autumn in a bowl.

Instructions
  1. In a small saucepan over medium heat, combine cooked quinoa, cashew milk and cinnamon, stirring often until everything is fully incorporated and your desired thickness is reached, a couple/few minutes. Hit it with a drizzle of maple syrup, stir, taste and adjust accordingly, until your desired sweetness is reached. Turn off the heat and cover to keep warm while you make the apples.
  2. In a small saute pan over medium heat, cook the butter until lightly browned – this can take a few minutes, but should be pretty quick since it’s a small amount of butter.
  3. When the butter is golden, add the apples, stirring to coat them all with the browned butter. Let them cook for a couple minutes, then stir again, cooking a couple minutes more. Add cinnamon, vanilla and maple syrup, stir and let cook for another minute or two until apples are soft and mixture is thick.
  4. Put the quinoa in a bowl, top with the apples and drizzle with a little maple almond butter.
