Sick Food: Tropical Green Smoothie Bowl

Some days, you just want a smoothie bowl for dinner, you know?? Especially when you’re feelin’ a little under-the-weather. Today would be one of those days. The boys all had some kind of cold-ish virus last week, so I not only had the pleasure of working overtime to nurse them back to health then, I get their viral sloppy-seconds now. Totally raw deal.

And there’s no “resting up” when you’re a mom of three and wife to one. Nope. You’ve still gotta be ON. Like all the time. In fact, as I made this smoothie tonight…after returning home from sitting outside in the humid 90-degree heat at Luke and Ford’s tee-ball practice…and surviving day #2 of summer break while also working from home…annnnnnnd feeling like a big, fat pile of cow s**t alllllll day long, all I wanted to do was retire to my bed and drift into dreamland to the sweet, sweet sounds of silence. No bickering children, no endless barrage of questions, just me and my air purifier whispering sweet nothings into my ear. But the hubs wasn’t havin’ it. He watched me intently as I made my smoothie, asking for a serving for himself as well, asking question…after question…after question, one of which was “Hey, could you review and edit that document I sent you earlier really quickly?”

Oh. Sure. There’s absolutely nothing I’d rather do more. Certainly not take a few swigs of NyQuil and call it a night.

I pulled up the document in question on my laptop. CHR Employee Handbook for the State of California. Real page-turner. Some virus-stricken wives might be a little put off by such a request when they are so clearrrrrrly knee-deep in snot rags. But not this girl. No, I much prefer forgoing recuperative sleep to pore over 36 pages of HR legal jargon. (insert straight-face emoji)

Remind me of this moment the next time hubs has the sniffles.

One thing that rocked about tonight though: this smoothie bowl. I’m telling you, it’s soft and fluffy and packin’ some maaaaaaajor tropical flaves. Try it. You’ll dig.

Instructions
  1. Super simp. Just put the coconut milk, coconut water, coconut extract, spinach, banana, mango and pineapple in the blender and blend until smooooooooth. Then pop it into a bowl and garnish with the coconut flakes and sliced banana. Boom. Done.
