Grilled Peach Watermelon and Burrata Salad

There’s a month of summer left, which is typically when I go apeshit trying to incorporate my favorite summer produce into each and every thing I consume before the last peach has fallen. This foxy little salad is a product of that particular facet of my madness (there are a few).

This dish is based off of an especially genius last-minute order switch-up a few weeks ago at Nordstrom Cafe. I have never, ever been disappointed with a Nordstrom Cafe salad, and this one, my friends, was no exception. I went in fully intending to go with my usual, then this summer special caught my eye. Curiosity: aroused.

Sweet, refreshing watermelon, juicy grilled peaches and cool, creamy burrata cheese, anchored with bright, peppery baby arugula dressed in a light vinaigrette, can be described as nothing other than the meaning of life on a plate. It’s one of those dishes that makes it impossible to have a bad day thereafter. (Caution: you may spontaneously break into a skip after eating, so be smart, choose suitable footwear.) Bonus: it’s exceedingly simple to throw together. You don’t even have to grill the peaches if you aren’t feeling it. Just do what feels right. It’s your journey, man.

Regardless of the peach deets, this is the perfect light summer lunch, so make it while you can!!

Instructions
  1. Grill the peach slices on both sides on a grill or grill pan.
  2. Whisk together the dressing ingredients in a large bowl, then toss with the arugula until all the leaves are lightly coated.
  3. Plate the arugula, top with the watermelon, peaches and burrata, and savor the flavor, people.
