My boys love smoothies, so I use every smoothie opportunity as a way to try and boost their nutrition for the day, this being one of their absolute faves.

I give you the Greeña Colada, a coconut-forward, island-inspired concoction with fresh, nutrient-rich spinach blended right in. If not for the resultant bright green hue, you’d never even know the spinach was in there. It’s all but undetectable, a smoothie Trojan horse, sneaking iron-loaded greens into unsuspecting sippers. The chia seeds add extra fiber, omega 3s and protein, along with a laundry list of other vitamins and minerals, and the banana and pineapple add smooth, sweet creaminess.

As far as midday snacks go, this one’s pretty stellar.

Instructions
  1. Put everything in the blender in the following order: coconut milk, coconut extract, chia seeds, spinach, banana and pineapple. (Blender tip: Anytime you're blending something, liquids should always go in first, then softer solids, then harder solids and frozens.)
  2. Blend until smooth, about 60 to 90 seconds, depending on your blender.
  3. Pour into a glass and sip up, buttercup.
