Cinnamon Sugar Donut Holes

These donut holes were kind of an accident the first time I made them. I had some biscuit-dough scraps and a stroke of cinnamon-sugar-tinged genius popped into my head. My friend Sara used to bring me homemade cinnamon-sugar donut holes in a brown paper bag. Typically, that bag was empty within an hour or so…15 minutes if I happened to be pregnant. Fetuses love donut holes.

So there my biscuit scraps laid, begging for greatness, reaching for the stars, aiming for a fate beyond that of a regular ol’ biscuit. And images of Sara’s brown paper bag of donut-hole deliciousness danced in my head. A quick dip in the (coconut oil) jacuzzi and a roll in the (brown paper) sack, and these cinnamon-sugar donut babies were born.

My boys go ape for these. Warm, soft, melt-in-your-mouth, pan-fried mini-biscuit balls kissed with sweet, lightly spiced cinnamon sugar?? Pass the drool bucket, please.

Instructions
  1. In a food processor, combine the 2 cups flour, baking powder, baking soda, salt, sugar and butter, and pulse until the flour mixture is the consistency of small pebbles.
  2. Through the feeder tube, with the food processor running, pour in the buttermilk and mix ONLY until the dough comes together in a big ball. DO NOT OVERMIX!!!!
  3. Dump the dough onto a floured work surface, sprinkle a bit of flour on top of the dough and press it out into a disk about an inch thick. Use a small biscuit cutter to cut out the donut holes or just form small dough balls by hand.
  4. Mix the cinnamon and sugar for the topping and pour about half into a brown paper bag, or onto a large plate.
  5. Heat about 1/2" of coconut oil in a large skillet, and when the oil is hot, carefully drop in dough balls, working in batches.
  6. Let the donut holes cook for a couple minutes, until golden on the bottoms, then carefully flip with a slotted spoon to let the other sides cook.
  7. When golden, remove the donut holes from the pan with the slotted spoon and transfer to the paper bag, close and shake one batch at a time, distributing the cinnamon-sugar evenly. OR transfer from the pan onto the plate, sprinkling the tops with more cinnamon sugar and lightly rolling each donut hole around on the plate to make sure it's evenly coated. Then transfer to a plate lined with parchment.
  8. Serve warm and listen to your lucky donut-hole recipients discuss your unparalleled awesomeness.
